Some of my favorite recipes

Since I mentioned this in my last post, here is the recipe (along with a couple of others):

Reese Balls

1 pound butter
2 cups peanut butter
2.5-3 pounds of powdered sugar
3 teaspoons of vanilla

Cream butter and peanut butter, add powdered sugar and vanilla. Make balls.

6 ounces semi-sweet chocolate chips
1/2 stick paraffin

Melt chips and paraffin. Use toothpicks to dunk balls into chocolate mixture, while still hot. Sit on wax paper to dry.

Makes a lot. =0)

Classic Cooked Eggnog

6 eggs
1/4 cup sugar
1/8 teaspoon salt
1/4 teaspoon ground nutmeg
4 cups milk
1 teaspoon vanilla
1/4 to 1/2 cup of brandy or rum (I use Kahlua)
Nutmeg for garnish

In a large saucepan, beat together eggs, sugar, salt and nutmeg. Stir in two cups of the milk. (NOT ALL) Cook over low heat constantly, until mixture is thick enough to coat a metal spoon with a thin film. (The temperature must reach 140 on an instant-read thermometer.)

Remove from heat. Stir in remaining two cups of milk and the vanilla. Cover and refrigerate until thoroughly chilled, usually several hours, or overnight. Just before serving, add liquor. Pour in bowl or pitcher and dust with nutmeg.

FOLLOW INSTRUCTIONS EXACTLY and it will be wonderful.

Pumpkin Roll
Preheat oven to 425 degrees
Grease and flour a 10x15 cookie sheet

3 eggs

Beat 5 minutes on high speed.

Add:

1 cup sugar
2/3 cup pumpkin
1 teaspoon lemon juice

Mix well.

Add:

3/4 cup flour
1 teaspoon baking POWDER
2 teaspoons cinnamon
1/2 teaspoon nutmeg
1 teaspoon ginger
1/2 teaspoon salt.

Mix well and spead on cookie sheet evenly. Bake for 15 minutes or until light golden brown.

Sprinkle a kitchen towel with powder sugar, turn cake onto towel and roll up. Chill for 30 minutes or more.

Filling:

1 cup powdered sugar
8 ounces cream cheese
4 tablespoons soft butter
1 teaspoon vanilla

Beat until smooth.

Take a sheet of wax paper, sprinkle with powder sugar, unroll cake on this. Spread on cooled unrolled cake. Reroll cake, wrap in wax paper and twist ends like a candy wrapper. Refrigerate until ready to serve, then slice.

Vanilla Wafer Cake

Preheat oven to 350 degrees
Grease a tube pan

Beat:

6 eggs

Add:

2 cups sugar
1/3 cup milk
1 cup melted butter (2 sticks)

Beat until creamy.

Add:

1 box crushed Vanilla Wafers

Mix well.

Add:

1 cup coconut
1 cup chopped pecans.

Mix well and pour into tube pan. Bake for 45-60 minutes, until golden brown.

Lemon Bars

Preheat oven to 350 degrees
Uses an ungreased 13x9 pan

1 boxed yellow pudding cake mix
1 egg
1/3 cup oil

Mix cake mix, egg and oil. Reserve 1 cup of mixture. Press remaining mixture into cake pan. Bake for 15 minutes. Let cool.

Topping:

8 ounces cream chees
1/3 cup sugar
2 teaspoons lemon juice
1 egg

Beat cream cheese, sugar, lemon juice and egg until smooth. (BTW-Lemon juice cooks the egg.) Spead over cooled cake. Sprinkle with reserve cake mixture.

MiMi's Smokin Pudding
(Some call it Chocolate Delight)
Pre heat oven 350 degrees
13x9 pan

Crust:
1 cup flour
1/2 cup chopped pecans
1 stick butter (1/2 cup)

Mix together, press in bottom of cake pan, bake for about 15 minutes. Cool.

Mix:
8 ounces of cream cheese
1 cup powder sugar
1 cup whipped topping

Mix until creamy. Spread on cooled crust.

Mix:
2 3 oz intant pudding
3 cups milk

Mix until thick and creamy. Spread over cream cheese mixture.

Top with the rest of whipped topping.

Chill.

(Do not do this early in the morning under a ceilin fan that is spinnin at reduced speed. Red Head Dancing has a story about last Thanksgiving, me and this pudding.)

Egg Casserole
Preheat oven to 350 degrees
13x9 pan

Place:

1 can cresent rolls

in 13x9 pan.

Brown:

1 pound sausage (Jimmy Dean style)

Drain. Place on cresent layer.

Mix:

6 eggs, beaten well
2/3 cup milk
salt and pepper to taste

Pour over sausage layer

Top with:

2 cups grated cheese

Bake for 25 minutes.

Hash Brown Casserole
Preheat oven 375 degrees
13x9 pan

1 pound frozen hash browns
1/2 pint sour cream
1 cup grated cheese
1 stick butter
1/4 cup onions or 1 bunch green onions
garlic powder, salt and pepper to taste

Mix together, bake covered for 45 minutes to 1 hour.

Breakfast Loaf
(from youngest daughter, Layne Spills)
Preheat 425 degrees
8x8 or a 9 deep dish pie pan (glass pans work best)

1 pound sausage, bacon, or ham (or a mix of any or all)
Cook meat. Drain.

Beat:
6 eggs

Add:
3 cups grated cheese (again any works, I've had a mix of feta, cheddar, parmesean. Cheese is cheese)

Cut up and add:
1 can Grands biscuits (or about 6-7 pieces of thick bread)

Add cooked meat. Stir, pour in pan. Bake for about 45 minutes. (Depends on how deep the pan is. Tube pans take almost an hour, 8x8, about 30 minutes.)  Bake until biscuits are brown.



Spinach-Strawberry Salad
(From my bff-GiGi)

2 bag spinach
2 carton sliced strawberries
2 cup sliced almonds
(1 small red onion can also be added)

Mix together.

Dressing:

1/4 cup apple cider vinegar
1/2 cup oil
1/2 cup sugar
2 teaspoons poppy seed or sesame seed
1 1/2 teaspoons minced onion
1/4 teaspoon worchesershire sauce
1/4 teaspoon paprika

Mix well and pour over salad just before serving.

Yum, that eggnog recipe looks wonderful, I had never thought to make it myself, usually just pick up a carton but I bet this would be sooooooooo
much better!!!!!

Deb-I can't STAND the store bough cartons! This is totally yummy!! Same with Apple Butter, can't stand the store bought stuff but I have an awesome recipe!!

Dutch Donut Girl, Reese Balls are peanut butter mixture in the middle and chocolate on the outside! YUMMMY!!
